Ingredients

3 tablespoons Flour - SR
1/4 teaspoon Baking powder
2 teaspoons Stevia sweetener
1 Eggs - large
Milk - Unsweetened almond coconut that is the milk I use

One of Robyn’s favourites – Pancakes light & fluffy

Mix egg yolk and Stevia, then add milk in another bowl, adds baking powder to egg white and beat stiff

Then add the egg white (a spoonful at a time) to the yolk mix

While doing all this, I have my (good quality, Berndes) non-stick pan on low 4 (Induction Cooktop)

Place 3 spoonfuls of mixture in the pan, cover with a lid for 5 minutes. Check with Spatla when the right colour underneath, turn, cook another 5 minutes with lid on
